Hi,
I have a MX27C4000 which i need to replace, but this chip is no
longer available. Does anyone know if i can switch it over for
a AT27C040.
They are both 4Mbit 512X8, the pinouts are exactly the same.

They should be read compatible, but you need to check the datasheet to confirm the pin out.
